Rocky Mountain Oysters

In Girl in the Glass, James and Declan are enjoying breakfast when Garrett arrives. When Garrett sees their plates, he informs James the meatballs he’s eating are, in fact, Rocky Mountain Oysters.

Rocky Mountain oysters are not seafood, but rather fried bull testicles. The nickname comes from their appearance, similar to oysters. They are popular in the American West and Canada, where they are traditionally served at rodeos, festivals, and restaurants. They are typically battered and fried, and served with a dipping sauce. 

The dish originates from the practice of castrating male cattle, and not wanting to waste any edible parts, once the testicles are removed, they are prepared as food. The testicles are peeled, sliced, battered, and fried. 

Rocky Mountain Oysters taste similar to calamari or chicken, with a slightly gamey flavor. The texture is described as chewy or tender, depending on how they are prepared. 

Rocky Mountain Oysters are also known as prairie oysters, calf fries, and cowboy caviar.
